Spiced Honey | Recipe

A super easy and traditional way to infuse honey with spices or herbs.

Part One: Mixing Honey with the spices or herbs.

Equipment

  • Jar with secure lid (holds 400-500g)
  • Scales / measuring cups
  • Tablespoon

Ingredients

  • 1 cup / 340g honey
  • 3 tbsp. spices / herbs
I used: 1 tbsp. ground cinnamon; 1 tbsp cardamom; 1 tbsp. fennel seeds; for a North Indian Chai flavour.

Other spices and herbs you can use: chillies, ginger, garlic, nutmeg, rosemary, sage, turmeric.

Method:

  1. Measure honey into jar
  2. Measure spices and herbs and grind if need be (hard spices like cardamom need to be ground slightly in a mortar and pestle before adding to honey)
  3. Add spices and herbs to honey
  4. Close lid tightly and shake
  5. Label and wait 2 weeks




Part Two: Straining and tasting the flavoured honey


Equipment:

  • Jar with secure lid (holds 400-500g)
  • Small sieve to fit the jar opening

Method:

  1. Sit the sieve on top of a clean jar
  2. Pour honey in small amounts to slowly separate the herb from the honey. This may take an hour or it may take 20 minutes, depending on the spices and herbs you used.
  3. Discard the plant matter 
  4. Taste your creation

Notice how dark the honey is now that is has been infused.
